15 Minute Cheesy Italian Pasta Skillet
Cook Time: 15 minutes Total Time: 15 minutes
Ingredients Yield: 4 servings
4 cups uncooked bow-tie pasta
1 14.5 oz can of condensed tomato soup
2 tablespoons Italian seasoning
1/8 teaspoon salt
1/8 teaspoon chicken seasoning (or chicken bouillon) 1 cup water
3/4 cup Parmesan cheese
2 cups mozzarella cheese, divided
Instructions
In large skillet, prepare pasta according to package directions.
Drain and return to skillet.
Stir in all ingredients, reserving 1 cup of mozzarella cheese for topping.
Cook on medium-high heat until boiling and reduce heat and simmer on low for three minutes.
Now, sprinkle remaining one cup of mozzarella cheese on top and cook on low until cheese is melted.
Garnish with additional Parsley or Italian seasoning.
Simple Tuna Croquettes
Ingredients
(1) five ounce can of tuna or (1) five-ounce pouch of tuna
2 eggs
1 onion, diced and sautéed
1/4 cup all-purpose flour
1/2 cup panko breadcrumbs
1/2 cup milk
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon fresh lime or juice
cooking oil
Instructions
In large mixing bowl, place tuna and shred with hand until tuna is in tiny pieces.
Add remaining ingredients — except Panko breadcrumbs — and stir and mix until thoroughly incorporated.
Fold in breadcrumbs.
In large skillet, heat a 1/2 inch of cooking oil on medium-high heat.
Quickly, make croquettes a little bigger than the palm of your hand and slowly place in hot oil.
Fry croquettes until golden brown (approximately 3 minutes per side) and then flip.
Once patties are browned on both sides, drain off grease.
Continue for all croquettes.
Optional — Give each croquette a squeeze of fresh lime juice before serving.

1 jar your favorite salsa
1 pkg taco seasoning
2 cup cheddar cheese (shredded)
1 cup Monterrey Jack cheese (shredded)
1 lb ground beef (cooked and drained)
Instructions
Preheat oven to 400 degrees Fahrenheit.
In medium-sized skillet, combine ground beef and taco seasoning and cook according to package directions for traditional taco meat.
Once cooked, pour a small amount of beef mixture into bottom of a 9x13 baking pan or your favorite baking dish. I use all sizes!
Place a soft tortilla on top of meat mixture.
Spread the tortilla with 1/4 cup beef mixture, 1/4 cup salsa and 1/4 cup cheddar cheese. Repeat for each later and then top off the top layer with remaining cheddar cheese as well as the Monterrey Jack Cheese.
Bake in oven until cheese is melted and slightly browned.
Garnish with sour cream and cilantro, if desired.
Super-easy, Salami, Pepperoni and Cheese Quesadillas
Prep Time: 3 minutes Cook Time: 3 minutes Total Time: 6 minutes
Ingredients
2 flour tortillas
2 sliced of pepperoni, diced
2 slices of salami, diced
1 Tablespoon cream cheese 1 tablespoon cheddar cheese 1/8 teaspoon oregano
1/8 teaspoon paprika
Instructions
Spread cream cheese on top of one flour tortilla.
Sprinkle diced meats on top of cream cheese.
Sprinkle cheddar cheese on top.
Sprinkle seasonings on top.
Place other tortilla on top to create one quesadilla.
In large skillet, place two tablespoons cooking oil and heat on medium-high. Gently place quesadilla in pan and cook until lightly browned, approximately one minute. Gently flip onto other side and cook until slightly brown.
Remove from heat and cut into wedges. Serve immediately.
